GITS:SAC is the only anime I’m hooked on because of its appealing sci-fi storyline. You have seen Ghost in the Shell 2: Innocence (the movie) as well I hope!
I saw both movies, although I need to see GITS2:I again. They plots to these shows make The X-Files seem straightforward.
I’m also partial to Cowboy Bepop (series, movie, and soundtrack). I’ve watched other anime, but these two are the only ones I’m hooked on.
